Internships and Service Projects

We offer hands-on, community-embedded experiences that can enrich your learning. We strive to offer paid opportunities with meaningful learning outcomes like:

  • Agricultural production
  • Dietetic Internships geared towards completion of a Master’s Degrees as Registered Dietitian Nutritionist
  • Capstone and Practicum for students in Colorado School of Public Health
  • For credit internships, practicum, capstone projects in STEM or outdoor education, nutrition, health, kinesiology, marketing/design and sociology/food insecurity.
    • Some projects may have remote options.

Internship Highlight

Applied Scholarship in Action – Grace Sonderman 2022

Grace split her time growing fresh produce at the Research Center and then working at the Community Food Bank to help clients enjoy the produce. She developed nutrition education strategies as a part of the Nutrition Programming Playbook that were approachable, accessible and client-centered so that we could give clients tools to use whole nutritious foods. Along the way, Grace developed experience in project planning, implementation, and writing. “It was incredibly fulfilling to not only provide fresh and local food for my neighbors, but to also spark welcoming conversations about the preparation of this food.”

Internship and Service Learning Opportunities for Spring 2023

Are you a student looking for service projects as a part of school credit, club, or scouts?  Email Amanda McQuade at amanda.mcquade@colostate.edu if you are interested in exploring possible projects or volunteering.

Dietetic Internship

  • Dietetic Internship, Community Rotation
  • Flexible start dates – late spring, summer, and early fall
  • Provides dietetic interns with training to prepare them for entry level dietetic positions. Interns will engage in outreach, education, and hunger relief efforts, promoting nutrition interventions and programming for the local community.
  • Interns will design and execute community-based programming and education including topics such as nutrition, food safety, food systems and cooking. Support area hunger relief efforts, outreach and education.
  • Requirements: This is designed for those needing to meet the requirements to become a Registered Dietitian Nutritionist through the Accreditation Council for Education in Nutrition and Dietetics (ACEND). Please contact us for additional information.
  • Ask how we can help connect you to preceptors that can provide clinical and institutional rotations. 
  • Unpaid, but housing may be available

Internship #1

  • Fruit and Vegetable Farm Hand
  • ~10 weeks, 29 hours/week, start date flexible – May – July.
  • Works with vegetable production team on maintaining vegetable plots for educational and farm-to-foodbank programs.
  • Work experience internship intended for people interested in a career in agriculture, horticulture, or landscaping. In partnership with Mesa County Workforce Center, so eligibility requirements apply.

Internship #2

  • Farm-to-School Instructional Aid
  • ~10 weeks, 29 hours/week, start date April or May,
  • Provides hands-on activities on the farm and teaching kitchen to students visiting through the Riverside Education Center. Training and curriculum development provided.
  • Work experience internship intended for people interested in a career in education or outdoor recreation. In partnership with Mesa County Workforce Center, so eligibility requirements apply.

  • Marketing and Design Intern

  • ~10 weeks, 29 hours/week, flexible start date May – September

  • Supports development of marketing and outreach material for Community Food Systems Program and WCRC-OM. Applicants need familiarity with marketing principles and have access to technology.

  • Work experience internship intended for people interested in a career in marketing or design. In partnership with Mesa County Workforce Center, so eligibility requirements apply.
